End of School Celebration? This Mixed Berry Sponge Cake is Perfect!


The end of the year is coming quickly. Don’t know what to bring to an end of year celebration? Well, you’re in luck; this delicious and light mixed berry sponge cake is perfect for this season. Let’s be honest, whipping up a cake can be so tiresome and time consuming, and most days getting a store bought cake seems ideal, but not for this cake. This mouth watering cake is easy and quick to make, and will always have people asking for the recipe.

Cake Ingredients:

  • Nonstick baking spray
  • 1/2 cup of milk 
  • 1/4 cup of unsalted butter
  • 1 1/2 cup of all purpose flour
  • 2 tsp of baking powder
  • Three large eggs
  • 3/4 tsp of salt
  • 3/4 cup of sugar
  • 1 tsp of vanilla extract

Cake Directions:

First preheat the oven to 350 Fahrenheit and then coat your cake pan with nonstick spray. Next, you heat milk and butter in a saucepan and then you stir until the butter is melted and the mixture is combined. Right after that, mix flour and baking powder in a bowl and then sift it. Beat the eggs and add the salt. After a minute, start adding the sugar and continue to mix it then slowly add the dry ingredients. Afterwards, add the vanilla and the milk mixture and combine all ingredients together. Next you pour it into the cake pan. Place it in the oven and bake for 15 to 25 minutes then let it cool.

Buttercream Ingredients : 

  • 2 cups of powdered sugar
  • ½ cup of unsalted softened butter
  • 1 tsp of vanilla
  • 1 to 2 tbsp of milk

Buttercream Directions:

First mix in the softened butter and the vanilla until it’s fully incorporated then slowly add the powdered sugar and add the milk little by little until you achieve the consistency that’s desired. Then add the buttercream on top of the cake. Finally, top with different types of fruits in whatever pattern you desire.
