The Best Pie Ever: Chef Randolph’s Sweet Potato Pie

Thanksgiving is right around the corner which means it’s time for pie! You should bring a homemade sweet potato pie. Here’s Chef Randolph’s Sweet Potato Pie recipe! Put your aprons on and let’s get baking!

What you need:

  • 400g sweet potato puree (or whole sweet potatoes)
  • 100g butter (Melted) 
  • 45 g Brown sugar 
  • 112g Heavy Cream 
  •  2 eggs 
  •  ½ tsp nutmeg 
  •  ½ tsp cinnamon 
  • 5g vanilla extract 

What you do:

  • In a mixing bowl whisk together sweet potato puree, softened butter, sugar, milk, eggs, nutmeg, cinnamon, and vanilla. *Whisk until evenly blended. Pour filling into pie crust.
  •  Cover loosely with foil.  Bake at 350F for 30 minutes.  Remove foil and bake for an additional 10 minutes or until a knife inserted in the center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.

Note: If your sweet potatoes are whole I suggest blending all of the ingredients together to get a smooth filling
